Over four years ago, we brewed this imperial pastry stout with one goal in mind—to let time do what no adjunct ever could. After fermentation, this beer was laid to rest in Smoke Wagon Bourbon barrels, where it quietly matured for years. During that time, the stout slowly pulled rich bourbon character from the oak, developing layers of vanilla, toasted oak, toffee, raisin, dark caramel, and a warming bourbon finish that only patience can create.
